Directions:
Brown 1 1/2 lbs. of hamburger with onions (Carol likes to use the 85% lean meat and then she pours the fat off after it is browned).


Boil and peel 6-7 red potatoes. After they are cooled, cut them into chunks.
Mix together the meat, the potatoes, one can of red kidney beans, one can of condensed tomato soup (Carol likes Campbell's and don't dilute it -- use it straight), and salt and pepper to taste.


Pour the mixture into a glass casserole (Carol likes to use a one quart round casserole) and put it in a 350 degree oven for approximately 30--45 minutes. The casserole should be bubbling around the edges when it is finished.
Now, Carol says that the Hungry Man Casserole with potatoes is best served fresh, although it does make for some nice leftovers. However, it is important to note that the Casserole does not freeze well, so don't plan on making extra and freezing it for use later. It just isn't a good idea.
